Masala Beans Loaded Jacket Potato (with Atrangi’s Curry Masala Paste)

INGREDIENTS

•⁠ ⁠2 large baking potatoes
•⁠ ⁠2 tbsp Atrangi Curry Masala Paste
•⁠ ⁠1 x 400g tin baked beans
•⁠ ⁠1 tbsp butter (optional)
•⁠ ⁠Fresh coriander, chopped

•⁠ ⁠Crispy onions
•⁠ ⁠Spring onions
•⁠ ⁠Sour cream or Greek yoghurt

Instruction:

1.⁠ ⁠Preheat the oven to 200°C (180°C fan).
2.⁠ ⁠Rub the potatoes with a little oil, prick with a fork and bake for 45–50 minutes, until crispy on the outside and fluffy inside.
3.⁠ ⁠Meanwhile, warm the baked beans in a saucepan.
4.⁠ ⁠Stir in 2 tablespoons of Atrangi Curry Masala Paste and cook for 2–3 minutes, allowing the flavours to combine.
5.⁠ ⁠Slice open the baked potatoes and fluff the inside with a fork. Add a little butter if desired.
6.⁠ ⁠Spoon the masala beans generously over each potato.
7.⁠ ⁠Finish with grated cheddar, fresh coriander and crispy onions, if using.

•⁠ ⁠Add grated mature cheddar while the potato is piping hot so it melts into the beans.
•⁠ ⁠A dollop of Greek yoghurt adds a lovely cooling contrast.
