Low-Calorie Chicken Curry (with Atrangi’s Curry Masala Paste)

INGREDIENTS

•⁠ ⁠2 chicken breasts (about 300g), diced
•⁠ ⁠2 tbsp Atrangi Curry Masala Paste
•⁠ ⁠250ml chicken stock (or vegetable stock)
•⁠ ⁠1 tbsp olive oil
•⁠ ⁠1 handful spinach (optional)
•⁠ ⁠Fresh coriander, chopped
To Serve (Optional)
•⁠ ⁠Steamed rice
•⁠ ⁠Cauliflower rice
•⁠ ⁠Tenderstem broccoli

Instruction:

1.⁠ ⁠Heat the olive oil in a large pan over medium heat.
2.⁠ ⁠Add the diced chicken and cook for 5–6 minutes until lightly browned.
3.⁠ ⁠Stir in 2 tablespoons of Atrangi Curry Masala Paste and cook for 2 minutes until fragrant.
4.⁠ ⁠Pour in the chicken or vegetable stock and stir until the paste has dissolved into a smooth sauce.
5.⁠ ⁠Simmer for 10–12 minutes, until the chicken is cooked through and the sauce has reduced slightly.
6.⁠ ⁠Stir in the spinach for the final minute, if using.
7.⁠ ⁠Garnish with fresh coriander and serve with cauliflower rice or steamed rice.

•⁠ ⁠Use vegetable stock to make this recipe suitable for tofu or chickpeas instead of chicken.
•⁠ ⁠Add broccoli, green beans or peppers for extra vegetables without many extra calories.
•⁠ ⁠For a creamier finish without adding much fat, stir through a spoonful of 0% Greek yoghurt just before serving (off the heat).
•⁠ ⁠This recipe is naturally lighter than a coconut-based curry but still packed with flavour thanks to the slow-cooked spices in the paste.
