INGREDIENTS

•⁠ ⁠250g raw king prawns, peeled and deveined
•⁠ ⁠2 tbsp Atrangi Mango Masala Chutney
•⁠ ⁠1 x 400ml can coconut milk
•⁠ ⁠1 tbsp oil
•⁠ ⁠Fresh coriander, chopped
•⁠ ⁠Juice of ½ lime
To Serve
•⁠ ⁠Steamed basmati rice
•⁠ ⁠Warm naan
•⁠ ⁠Lime wedges

Instruction:

1.⁠ ⁠Heat the oil in a large frying pan over medium heat.
2.⁠ ⁠Stir in 2 tablespoons of Atrangi Mango Masala Chutney and cook for 1–2 minutes until fragrant.
3.⁠ ⁠Pour in the coconut milk and stir until smooth.
4.⁠ ⁠Bring to a gentle simmer for 3–4 minutes.
5.⁠ ⁠Add the king prawns and cook for 4–5 minutes, until pink and cooked through.
6.⁠ ⁠Finish with a squeeze of fresh lime juice and chopped coriander.
7.⁠ ⁠Serve immediately with fluffy basmati rice or warm naan.
